燒 BBQ roast pork
材料:
梅花肉 1公斤
砂糖 120克
醬油 100毫升
蠔油 2大匙
料酒 5大匙
五香粉 1/2茶匙
蒜末 1大匙
豆腐乳 1塊
鹽 1/4茶匙
紅色素 少許
麥芽糖材料:
麥芽糖 2大匙
水 1大匙
做法:
1.把肉和全所有材料混合均勻,放入冰箱冷藏醃漬隔夜(中間取出翻面)。
2.將麥芽糖和水拌勻,備用。
3.预热烤箱,將醃漬好的肉鋪在烤架上,以220℃烤约15分钟。
4.將烤盤取出,將肉翻面,繼續烤約10分鐘。
5.將烤盤取出,在肉兩面刷上麥芽糖,再以230℃烤约2分钟。
6.重複做法5二至三次,烤至周圍焦香即可。
Ingredients:
1kg Pork belly
120g Granulated sugar
100ml Soy sauce
2Tbsp Oyster sauce
5Tbsp Cooking wine
1/2tsp Five spice powder
1Tbsp Garlic (chopped)
1 Fermented bean curd
1/4tsp Salt
Red colouring
Maltose ingredients:
2Tbsp Maltose
1Tbsp Water
Procedure:
1. Mix well pork belly with seasoning, keep in fridge and marinate for overnights.
2. Mix well maltose and water in a bowl, and set aside.
3. Place pork belly Bake on baking tray, bake in pre-heated oven at 220℃ for 15minutes.
4. Turn the pork belly and continue bake for 10minutes.
5. Brush the pork belly with maltose, and continue baked at 230℃ for 2minutes
6. Repeat steps 5 for 2 to 3 times, until pork belly turn slightly charred.
